Baking: Pumpkin Spice Cupcakes

Sometimes when you're done carving your pumpkins, all the stuff inside goes to waste. Here's how you can use it to make some cupcakes!

For the cakes:
(please note that this recipe is based the 'spiced pumpkin muffins' recipe in 'Annabel Carmel's After-School Meal Planner')
500g pumpkin flesh
570g self-raising flour
340g soft brown sugar
200g sultanas
1/2 tsp bicarbonate of soda
1tsp cinnamon
3tsp mixed spice
300ml milk
300ml sunflower oil
4 eggs

For the icing:
250g icing sugar
80g margarine
orange food colouring

A large bowl
A measuring jug
A food processor
A spoon
A steamer

Making the Cakes:

1) Preheat the oven to 180°C, 160°C fan or gas mark 4.

2) Put all the dry ingredients (flour, sugar, cinnamon, mixed spice, bicarbonate of soda and sultanas) in a large bowl and mix together.

3) Put the oil, milk and eggs into a jug and mix them well.

4) Steam the pumpkin for about 15 minutes until it is soft and then purée it in a food processor.

5) Pour in the egg mixture to the bowl and spoon in the pumpkin as well. Using a spoon, stir all the ingredients together until everything is combined.

6) Spoon the mixture into the muffin cases until they are about two thirds full. I find that the mixture can make 25 cakes. Try to stir the mixture every few cases, so as to get the sultanas distributed evenly throughout the cakes.

7) Put them in an oven for about 20 minutes until a skewer poked in them comes out clean.

Making the Icing:

8) Sift the icing sugar into a bowl and add the butter. Whisk these together until it resembles breadcrumbs.

9) Continue to whisk together, adding a drop of milk every so often until the mixture is easy to spread, but thick enough to keep its shape.

10) Add a little bit of food colouring and mix it in. Keep adding more colouring until you get the colour you want.

11) Spread the icing onto the cakes and you're done. Why not add a 'spooky' icing cobweb or two?
